I’ve always been a big fan of a proper pub lunch, but it seems harder to find these days. Many pubs have shifted to follow trends, and while I don’t blame them for staying current, it’s becoming nearly impossible to enjoy a good old traditional pub pie and mash. That’s what inspired me to start sharing some of my favorite recipes — classic pub dishes alongside other beloved meals from café and restaurant menus that I’ve picked up or created during my years as a chef. I first started working as a chef in a traditional west end pub in Westminster, London, UK. Making traditional pub lunches everyday from fresh ingredients such as steak and ale pie or a cottage pie, serving regulars and tourists alike. 

 

 

My favourite regulars were always the crew from the Palladium which was a few yards up the road from where I was based at the Clachan in Kingly Street. I got plenty of invites to watch shows, I saw Art Garfunkel there, brilliant, but shame Paul Simon wasn’t with him.
